Cebolla y Bacon

For the tomato sauce, Chón started by frying onions (cebollas) in some olive oil in a pan (sarten) then added sliced garlic half-way through. When the onions were close to being done, she added some chopped bacon (same word in English and Spanish), stirred it around and let it cook a few minutes.  At the very end she added a tablespoon of paprika and a box of "tomato frito" which is like tomato sauce, but made with fried tomatoes. The Spanish love their frying!

When something is finished, Chón declares, "Está." This literally means "is" but translates to meaning "It's finished/ready."

 The pasta would have been even better with real tomatoes in addition to the packaged sauce, plus more onions & garlic. Chón made quite a bit of spaghetti, so the sauce was stretched a lot farther than I would have preferred. I always like more sauce and less pasta.  Some spinach stirred in at the end would have added a nice fresh element.

 Chón fried cubed chicken with the bone on, and added some raw onions and garlic and let everything simmer for awhile with a lid on.  The onions released quite a bit of liquid. She added some canned red bell peppers (pimentón rojo) at the end.

 Very tasty.  The meat was still on the bone, so it was a little trickier to eat. The bell peppers definitely helped elevate the dish in terms of visual appeal and added another layer of flavor.
