1. Sprinkle fillets with salt. (Notice Chón´s nifty fish thawer. It has a shelf for the water to drip through.)
2. Dip fillets in flour.
3. Then dip fillets in beaten egg. One egg should be enough.
4. Heat 1/2" of oil until bubbling, and slide in fillets.
5. Cook for 3 minutes (I timed it) until golden, then flip.
6. Cook 3 more minutes until golden.

The egg makes a huge difference! It gives the fish a subtle crunch and makes it a beautiful golden color. Got to have a couple leftover sardinas, too!

This lemon yogurt was delicious. It has been interesting comparing the lemon yogurt brands. This was brand #3.
