For the postre (dessert), we learned how to make flan in a pressure cooker. It was a lusciously creamy and caramelized end to a fun afternoon of cooking.
Ingredients
1 can evaporated milk
1 can sweetened condensed milk
2 whole eggs
3 yolks (llemas)
chorito (splash) of vanilla
sugar
Blend everything except sugar in a blender. Add enough sugar to cover the bottom of your flan pan (1/4 c).
Bring pan to high heat and let sugar get golden.
Once golden and bubbling, let it turn a medium-caramel color than remove from heat and let stand.
Cover thoroughly with aluminum foil and place in a pressure cooker in about 1" of water. Flan usually takes 1 hour to bake, but only about 30 min in a pressure cooker.
Perfection!
Delicious with a tazita of Oaxacan coffee (café, piloncello, canela) and a cup of fresh mint tea.
