Noche 1 en Oaxaca: Mole y Ensalada










Before dinner, Alex and I went on a walk around the neighborhood. He wanted me to take pictures of all the arbustos formas (shaped bushes) and liked this one the best because it looks like an egg.

Mole rápido y una ensalada con mango y zanahoria

This mole had pork and was made with fewer ingredients over a shorter period of time than the mole negro we had for lunch.  Most of Aurea's students in the past haven't really liked eating many fruits or vegetables, so Aurea is happy that Lisa and I are both happy to eat lots of F&V! Aurea is nurse and quite health conscious.
