Mañana 18: Memele con Huevo


Memele con frijoles negros, quesillo, y huevo was my favorite breakfast in Oaxaca and one that I wish I could have in the US, but I have yet to locate memeles.  A memele is a slightly thicker corn tortilla with an oblong shape and has more deflated air pockets than a typical tortilla.  The frijoles negroes had a slight kick from chile de arbol and Aurea's salsa verde added another spice dimension. 

Dipping my melon cubes in plain yogurt helped cool my palette since that salsa verde was muy picante!


Aurea had to go back to her part-time work at the hospital (she retires next year), but Ivette was able to make us breakfast because her vacation time happened to commence this week.
