Chón dipped the fillets of sole in flour (harina) then fried them in hot olive oil.

Sole has a mild, delicate flavor and is a little firmer than hake. Very tasty.
 
Ensalada de Patatas
 
The salad needed a little extra vinager or green olives, but it was still tasty. It consisted of some tuna, cucumber, boiled potato & egg, and tomato with a drizzle of olive oil.  The potatoes were still warm, and I think if they had had time to cool, they would have kept their shape better.
