Café NM was next on the list for our before school coffee adventures in Oaxaca, Mexico. It definitely lived up to the rave reviews on TripAdvisor.
I got to talk with Christian, the Maestro Tostador (Master Roaster) about Café NM's coffee. They placed third in el concurso nacional (national competition) and have coffee that's rated as calidad primero (highest tier of quality).

Christian's description of their coffee: balanceado (balanced), afrutado (fruity), and amargo como chocolate (bitter like chocolate). I fully agree with all these descriptions and absolutely loved this coffee.
One morning we sat by the window and had a great vantage point of the coffee machine. Watching baristas go through the motions of making a cup of coffee from start to finish is fascinating.
I hate this part...no more coffee left.
