Mañana 6 en Oaxaca: Huevos Planos y Mamey


Aurea has a personal sized sarten (frying pan) that is just perfect for cooking a single egg, mini omelette, or huevos planos (egg pancakes).  She first beat two eggs, cooked them in her little skillet, then dunked them in a tomato-habernero sauce.  Epazote leaves lent an earthy flavor to the black bean sauce.


I liked how the toothsomeness of the egg pancakes contrasted with the ultra-smooth and soupy black beans.  The red salsa added just enough kick to liven the eggs, since ground black pepper is not used here for flavor.


Mamey is one of the most interesting fruits I've ever tried and I wish it were available in CA! The peel is hard and feels like sandpaper, while the flesh is ultra creamy with a flavor akin to sweet potato.  It's a feast for the eyes as well as the taste buds.



The hueso (pit) is such an odd shape and HUGE.


Downtown is so peaceful in the morning.
