Mañana 10 en Oaxaca: Huevos Pajaritos


Aurea has told me multiple times that el desayuno should be different every morning. Entonces, today we had huevos pajaritos, which is kind of like scrambled eggs, except the eggs are not beaten before being poured into the pan.  Rather, you stir the eggs in the pan the same way a bird scratches dirt.  Pajarito is a diminutive form of bird.

In Mexico, the shape of the tortilla determines the name of the dish, so this breakfast would just be a memele. I love the más grueso (thicker) texture of the memele tortilla because it doesn't dry out when it gets toasted. Memeles tend to have a more oval form, though some memelitas are circular. 

Rompe los huevos directement en el sarten. 
Crack the eggs directly into the pan.


 Mezcla suavemente. 
Mix gently.
